Oregon has a number of micro distilleries making products that are distinctly Oregon. Listed at the bottom of this page are the links to all of Oregon's distilleries, though more continue to open annually! Rogue House of Spirits, in Newport, produces a Hazelnut Spiced Rum using Oregon grown hazelnuts. Master Distiller John Couchot also produces a Spruce Gin! When the temperature of the still is brought up to approximately 176ºF* alcohol changes to a gas. *Temperature required at sea level. Above: The liquor, at about 175 proof leaves Tracey by way of the condenser. The condenser has about 40 feet of copper piping coiled up inside which allow cold water to turn the alcohol vapors into a liquid. Rogue's Spruce Gin Rogue's creationaries defined it something like this: the simple spirit is heated to a temperature of 176 degrees Fahrenheit in a 150 gallon Vendome copper pot still; alcohol vapors then rise up through the still column, passing through 11 botanicals on its way, trapping their essence within the alcohol vapors. In a single pass, the copper creature does the job of what would normally be 4, re-condensing the alcohol vapors and ejecting the clear liquid out at about 175 proof. The distiller then brings the Gin down to 90 proof or 45% alcohol by volume in a process known as smithing, whereby free range coastal water is hand-apportioned to each small batch. Finally, the gin is hand-bottled, capped and heat-sealed in a 750ml serigraphed bottle whose artwork commemorates Oregon spruce loggers of the 1800s. Click HERE to read about Rogue's other spirits.
